Kamote ala Halayan (Halayang Ube Alternative)
Let's call this recipe, Kamote ala Halayan as the preparation and ingredients are almost similar to Halayang Ube. Instead of using ube which is quite hard to purchase in the city and a little bit expensive than sweet potato (kamote). This recipe prefers the purple variety of kamote as it is sweeter than the white and yellow varieties. But you can use the other varieties if the purple one is not available in your area. The purple hue of the kamote can even compare to the ube's color. You can learn more about the different varieties of kamote here. 1 big can condensed milk (300mL)
2 pcs big sweet potato (kamote) - about 350 grams
1 1/2 tbsp melted butter
Total cost: around Php80
Procedure
1. Boil the kamote in a casserole until it becomes soft and the skin can easily be peeled off.
2. Remove the kamote skin and mash it along with the melted butter and condensed milk. Remember to add the milk in three portions to ease the mashing process.
3. Once the ingredients are thoroughly combined and mashed, heat a deep pan in low heat. Put the mixture in the pan, cooking it in cut and fold process until it becomes smooth and clings to the spoon. Cooking will take around 25-30 minutes. Don't let the mixture burn.
4. Allow it to cool and serve it as dessert. Refrigerate the leftovers.
